#FrenchFromageFriday: the Legend of Roquefort

Bonjour nos amis and happy #FrenchFromageFriday! We’re excited to continue our series and share with you the ultimate classique: ROQUEFORT

This ultra-funky sheep’s milk blue was the first cheese given name protection in France in 1925, and as such must always be made from the milk of the Lacaune breed of sheep, the sheep must spend as much time pastoring as possible, and it must be aged in the natural Mont Cambalou caves in the Roquefort region of southern France.

Legend has it that a young sheep herder was having a lunch of bread and sheep’s milk cheese in the caves when he saw a beautiful girl and ran to meet her. When he came back to the cave months later the mold from the bread had turned his cheese into blue cheese! Et voila, Roquefort was born.

Whether or not the legend is true, Roquefort is known as the king of cheeses and is a staple in France. It is salty, pungent and has a slight hint of menthol (you definitely can tell it’s cave aged 😂). This creamy delight is sharp and rich, and we love to pair it with figs, dark chocolate and grapes! We picked up this beauty at Antonelli’s Cheese Shop in Austin, TX and while it’s easy to find Roquefort, we always recommend heading to your local cheese shop to sample and learn more about the cheeses you love!
