#Frenchfromagefriday: Oh-so Ossau Iraty

Happy #FrenchFromageFriday, nos amis!

We are introducing an absolute CLASSIC today: Ossau Iraty (oh-sow ee-rot-ee)

A sheep’s milk cheese from the Basque region, cheesemakers pool milk from herds in the Ossau Valley and the Iraty Forest. Sometimes referred to Esquirrou, it’s recipe is nearly 4,000 years old (so you know they’re doing something right!).

Because of the richness of sheep’s milk, it’s texture is creamy and smooth, making it a perfect melting cheese. With notes of toasted nuts, this mild, rich fromage is buttery and beautiful, and a great snacking cheese! We picked up this beauty from Antonellis Cheese Shop in Austin (their best selling cheese, for good reason!). You can also typically find it at other specialty cheese shops and grocery stores.
