Did you know that cheese is seasonal?

Summertime is a great berry season for us in America, and it’s also a great time for aged cheeses.

This is because pastured animals are eating more grass, which means their milk is lower in fat and higher in protein, lending itself to produce drier, aged cheeses with sharp tastes and flavors. However, some of our favorite summertime cheeses aren’t considered seasonal, but are popular because of their great pairings.

Soft, creamy cheeses like Mozzarella di Bufala and Burrata are highly enjoyed in the summertime because they pair well with tart and acidic flavors like tomatoes, peaches, and summer fruits and vegetables.
